Cassava is the root Ghana grates and dries into garri, milled to a finer grain than the coarse Ijebu style favored across the border in Nigeria. It fries into the firmest chip of the six — dense enough to carry a heavy dip without snapping — and the Hot & Spicy bag lists chili as an actual ingredient beside the cassava, vegetable seasoning and salt, so the heat builds rather than coats.
Yam is a separate crop from sweet potato and important enough in Ghana to have a festival of its own: the Ashanti Yam Festival, kept by Akan communities and by the Bono and the Ewe, marks the new-yam harvest, and the first yams are offered to the ancestors before the wider community may eat them. Sliced thin, yam fries drier and lighter than potato or cassava, with a brittle snap and a mild floury sweetness. The Original bag is three ingredients — yams, salt, vegetable oil — and the Hot & Spicy adds chili and vegetable seasoning.
The plantain bag leans sweet, and the sweetness is the fruit's own rather than added sugar; it is plantain and salt, nothing else. It is a much simpler thing than kelewele, Ghana's spiced, cubed, deep-fried plantain, and is not sold as a version of it. The two sweet potato bags are three ingredients each — sweet potato, vegetable oil, salt — and fry darker and earthier than a white potato chip. One honest note on those: the pack printed Hot & Spicy lists no chili on its ingredient panel, so treat that name as how you tell the two sweet potato bags apart rather than as a heat rating.
